Cranberry Grape Tea Bread

Ingredients:
  • 2 1/2 cups flour
  • 3/4 cup sugar
  • 3 teaspoons baking powder
  • 1/4 cup canola oil
  • 1 cup light sour cream
  • 1/4 cup lowfat milk
  • 1 egg, beaten
  • 2 teaspoons lemon zest
  • 1/2 cup chopped walnuts
  • 1/2 cup dried cranberries
  • 1 1/2 cup halved California seedless grapes
Instructions:
  • Preheat oven to 350 degrees.
  • Oil and flour the bottoms of two 8 1/2 x 4 1/2 x 2 1/2 inch loaf pans.
  • Combine all ingredients except grapes and mix well. Note: batter will be stiff.
  • Gently mix in grapes.
  • Divide the batter evenly between the 2 loaf pans
  • Bake for 45-50 minutes or until wooden pick inserted near center comes out clean.
  • Cool 5 minutes.
  • Turn out onto wire rack and cool completely before slicing.
  • Each loaf will yield about 16 slices.
