Lisa’s Butterscotch Cracker Candy

Ingredients:
  • 1 cookie sheet
  • Aluminum foil
  • Cooking spray
  • 2 sticks butter
  • 1 cup plus 2 tbs brown sugar
  • Sleeve of Club Crackers (salted)
  • 1 package butterscotch morsels (you can use chocolate or semi-sweet chocolate chips, but butterscotch is preferred)
Instructions:
  • Pre-heat oven to 350 degrees
  • Put foil on the baking sheet and spray with cooking spray
  • Spread one layer of crackers
  • Melt butter and add brown sugar. Boil for 3 minutes.
  • Spread over the crackers and bake at 350 degrees for 5 minutes.
  • Add butterscotch chips – cover with tin foil for 3 minutes, then spread the melted chips over the surface
  • Freeze for 20 minutes
  • Cut into bite-sized squares
